Nicole aka Nikki from Long Island, aka Mama Chocolate

Every home has a center and for us,

it was always the kitchen table.

Long before Bar32, before bean-to-bar chocolate, there was flour-dusted parchment paper, brown sugar measured in cups, and chocolate chips poured by the handful. There was laughter, teenage tears, report cards, dance recitals, and Friday nights. It was where life happened.

To some, she’s Nicole.
To her roots, she’ll always be Nikki from Long Island.
But to those who walk through the doors of Bar32,

she’s Mama Chocolate.

The name stuck when a customer couldn’t remember her real name but never forgot how she made them feel. And that’s the thing: Nicole has always been a mom to everyone.

Bar32 wasn’t born from a business plan. It grew naturally from years in the kitchen and one belief that food, especially chocolate, brings people together. Mama always said a shared treat could make a good moment better and a hard moment a little softer.

Her brownies were the answer to long school days and heavy moments: rich, fudgy, straight-from-the-pan comfort. Her chocolate chip cookies marked the celebrations: golden on the edges, gooey in the middle, never lasting long on the counter.

As the years passed, the kids grew up but the feeling never faded. That kitchen-table magic grew with us.

What began in a family kitchen has evolved into handcrafted chocolate made right here in Atlantic City. Today at Bar32, we ethically source cacao beans from around the world, roast and grind them in-house, and turn them into the kind of chocolate you’ll want to come back for.

Because this has never been just about chocolate.
It’s about comfort. Connection. Making people feel at home.

Her famous Brown Butter Chocolate Chip Cookies still carry that spirit. Inspired by her mother’s recipe, these cookies are rich with chocolate and finished with a touch of sea salt. And yes, the brownies are still here too… just as fudgy, just as comforting, still the kind you want to share (or keep for yourself).

Mama Chocolate isn’t just a nickname. It’s who she is.

 

And whether she’s serving a dessert, remembering your favorite order, or simply asking how your day was, she’s still doing what she’s always done: sharing the kind of warmth that only chocolate (and a little love) can bring.
